Uses of mid-infrared spectroscopy and chemometric models for differentiating between dried cocoa bean varieties

ABSTRACT Generally, the taxonomic classification of cocoa beans is based on theobromine/caffeine ratio determined using high-performance liquid chromatography (HPLC). However, this technique involves laborious and time-consuming calculations. Attenuated total reflectance Fourier transform infrared (ATR-FTIR) spectroscopy a valuable, effective, rapid tool for analyzing chemical composition food products. The objective study was to examine potential ATR-FTIR combined with chemometric tools such as principal component analysis (PCA), linear discriminant (LDA), partial least squares regression-discriminant (PLS-DA) discriminate between Trinitario Forastero dry bean varieties defined by theobromine caffeine measurements via HPLC. were evaluated HPLC 36 samples determine ratio. Moreover, spectra analyzed in mid-infrared (MIR) region, signals associated identified LDA PLS-DA models. models allowed satisfactory differentiation varieties, providing overall prediction capacity values 98.2 ± 1.8% 96.1 2.4%, respectively. results show reliable, fast, easy dried beans.
